Blue Oyster Cultivation
Blue Oyster Cultivation is a family-owned gourmet mushroom farm located in beautiful Ithaca, New York. Our head cultivator, Joseph Rizzo, worked with his family's farm in the New York City Greenmarkets. After finishing college he spent several years teaching botany and life science to inner-city middle school children in Brooklyn. Now Joseph has brought his botanical skills to Central New York where he is committed to creating a sustainable, agro-ecological model using oyster mushrooms as the centerpiece.
The oyster mushroom is a primary decomposer in nature. It can eat just about anything with cellulose. That's good for nature because it sets the stage for diverse biological communities. It's good for us because it converts renewable, undigestable cellulose into digestable protein in the form of a choice edible mushroom! The oyster mushroom serves as the foundation of our sustainable agricultural endeavor.
